PURPOSE:To provide dried rice developing no odor, brewable even with highly polished rice, good in the solubility in the state of unrefined sake, thus facilitating Japanese wine making at lower temperatures. CONSTITUTION:The apparatus is made up of (A) a rice steamer to steam soaken rice, (B) a blower to quench the steamed rice from the above steamer, (C) a steamed rice crusher to instantaneously crush and fluidize the above-quenched steamed rice, and (D) a conveyor-type dryer and a fluidizing dryer to immediately dehumidify and then continuously dry with reheated air the resulting steamed rice from the above crusher. |
