PURPOSE:To prepare a gruel sufficiently sterilized with heat, containing moderately swollen rice grains and uniformly gelatinized starch, having excellent palatability and preservable at normal temperature by sealing raw rice and water in a packaging material and heating and cooling the content under respective specific conditions. CONSTITUTION:Raw rice and water are sealed in a packaging material such as a can or a packaging pouch and heated at 115-130 deg.C until the F value of the content reaches 2-15. The heat-treated product is cooled to 60-95 deg.C, maintained at the temperature preferably for 5-30min and quickly cooled preferably by lowering the temperature of the gruel to 20-30 deg.C within 5min. The amount of water is preferably 6-8 pts.wt. based on 1 pt.wt. of the raw rice. |
