PURPOSE:To provide a composition containing a diglyceride in the oil phase, capable of imparting excellent loosened texture to cooked rice without deteriorating the taste, flavor and palatability of the cooked rice when added to rice in cooking or mixed into cooked rice and giving a frozen cooked rice having excellent loose texture. CONSTITUTION:The composition contains 1-60wt.% of a diglyceride in the oil phase. The diglyceride can be produced e.g. by the ester interchange of an oil and fat such as animal or vegetable oil and fat with glycerol in the presence of an alkali metal hydroxide or alkaline earth metal hydroxide. The composition is preferably further compounded with a protein decomposed by an endo-type protease such as pepsin and an organic acid selected from citric acid, gluconic acid and phytic acid. |
