<p>Mould consists of a drain tray, a set of moulds, a mould heater plate, a draw-screen, and a curd box, the header plate and the bottom of the curd box having holes matching the array of moulds. The parts are fitted together and the curd box is filled with curd, the whey draining away down through the screen. Into the full box is inserted a separator grid so that when the screen is slid out equal amounts of curd fall into each mould.</p> |
