PURPOSE:To obtain the subject defoaming agent excellent in safety and flavor and useful for producing TOFU(soybean curd), etc., by mixing a glycerin fatty acid ester with water while heating to form VISCOUS-ISOTROPIC(VI) and mixing the VI with a specific diglyceride. CONSTITUTION:The objective defoaming agent is obtained by mixing (A) a glycerin fatty acid ester such as monoglyceride oleate with water while heating to form VISCOUS-ISOTROPIC(VI) and mixing the VI or the dried VI with (B) one kind or two or more kinds of 14-24C fatty acid diglycerides (e.g. oleic acid diglyceride). Furthermore, the blend ratio of these components A and B is preferably in the range of (99.9/0.01) to (0.01/99.9) expressed in terms of weight ratio of the component B to the component A and the amount of the defoaming agent is normally preferably 0.05-0.3wt.% based on a food. |
