To produce a food, a vegetable fruit flour or fruit meal, in particular wheat flour or wheatmeal, is heat-treated in water and the product so obtained is stored essentially in the absence of air until the gas formation occurring during this is essentially completed. A process product is produced by this procedure in a natural manner by a microbial fermentation, in which process product the vegetable starch which is only sparingly degradable in the digestion is converted at any rate at least partly into better utilisable proteins and furthermore further nutrients and active compounds are made available which were not present in the fruit flour or fruit meal or not in this amount, in particular amino acids and other organic acids, vitamins, hormones, ferments, enzymes, antibiotics and living microorganisms and/or stable forms thereof. |
