摘要 In accordance with the method of the present invention for making an unbaked cheesecake, a mixture of heated water, gelatin, a gum, starch and ricotta cheese is formed. The mixture is subjected to high shear agitation for a period of time sufficient to gelatinize the starch and provide a smooth homogeneous dispersion. The homogeneous dispersion is then combined with a non-dairy whipped topping and the combination is mixed to provide a cheesecake blend. Upon refrigeration, a cheesecake is provided in final form without the use of a baking step.
