发明名称 PRODUCTION OF COOKED FROZEN FOOD
摘要 PURPOSE:To obtain the subject frozen food capable of reproducing taste and texture just after cooking by frying an ingredient material coated with an aqueous solution of readily solubilized gelatin in an oil, cooling the fried ingredient material, then packaging the cooled ingredient material with a water- blocking film and freezing the packaged ingredient material. CONSTITUTION:An ingredient material for fried foods is immersed in an aqueous solution of readily solubilized gelatin (completely soluble at >=20 deg.C temperature), preferably at 0.5-5wt.% concentration and coated therewith. A coating is then applied to the resultant coated ingredient material and the obtained ingredient material is subsequently fried in an oil and thermally cooked. The oil is then sufficiently drained and the drained ingredient material is cooled and subsequently packaged with a water-blocking film and frozen to afford the objective food.
