The angle of the cutting blades to remove the flesh from prepared fish uses a sensor to follow the contours of the backbone which, with a control valve and hydraulic cylinder, ensured that the cutting angle of the circular blades gives a cut close to the bone. This allows a constant adjustment for the individual fish size passing through for filletting, with a minimum of wastage. |
