PURPOSE:To obtain dried noodles capable of quickly being restored to the original state by hot water, excellent in texture, appearance, taste and shelf stability and suitable for dried buckwheat noodles by controlling humidity so as to keep Aw (water activity) of dried noodle, etc., dried in a prescribed water content or below by a hot air drying, etc., in a prescribed range. CONSTITUTION:Humidity of dried noodles or soybeans dried to <=20% water content by hot air drying after harvesting is controlled so as to keep 0.5-0.95, preferably 0.6-0.8 Aw (water activity) to provide the objective dried noodles and soybeans. |
