PURPOSE:To efficiently obtain bittern TOFU having good sweetness, taste, etc., permeating a seasoning solution, by directly sending electricity to raw material soybeans, extracting soybean protein and adding magnesium chloride. CONSTITUTION:In producing TOFU, before soybean protein is soaked and eluted, electricity is directly sent to raw material soybeans. A high-voltage electrostatic transformer wherein a 100V AC source is used as a primary side, one pole on the high-voltage secondary side is insulated and the other remaining pole is made usable can be used as the high-voltage source in the electricity application. About 150V.A.Hr-500V.A.Hr based on 1m<2> electrode area or contact area between soybeans and the electrode can be applied as electricity application condition. |
