PURPOSE:To produce a precooked noodle capable of quick reconstitution with hot water, rarely swelling excessively and excellent in mouth feeling by using a specified processed starch in combination with starches. CONSTITUTION:The objective precooked noodle is produced by using a processed starch having <=8wt.% solubility under heat, exhibiting a granular state containing <=5wt.% fraction not passing through 60 mesh sieve, satisfying a relation of 1.2>=Sc/Sn>=0.8 as the ratio of swelling by cold water (Sc) to swelling under heat (Sn) and having 4 to 15 swelling by cold water as one component of the starches. In addition, the above-mentioned processed starch is used preferably in an amount of 2 to 10wt.% based on the total weight of the raw material cereal flour and starches. |
