PURPOSE:To obtain potato chips good in aroma and flavor by washing a potato having a prescribed content of reducing sugar, subsequently slicing the washed potato, then subjecting the slices to immersing treatment in a sugar solution and further frying the slices. CONSTITUTION:A raw material potato with <=0.1% content of reducing sugar is washed and subsequently sliced into thin pieces with a slicer. The thin pieces of the slices are subjected to immersing treatment in a sugar solution such as glucose, fructose, isomerized sugar or invert sugar, further fed to a fryer and subjected to frying treatment to afford the objective potato chips capable of extremely uniformly assuming a light gold color. |
