PURPOSE:To give the subject fraction which is useful in prevention and treatment for osteoarthropathy, particularly osteoporosis, and can be used by addition to various kinds of food products, animal feed and medicines, by adding ethanol to whey protein to form precipitation. CONSTITUTION:The subject fraction is formed by causing precipitation from an aqueous protein originating from whey at 2 to 6 pH in the 10% final ethanol concentration, and has 5,000 to 28,000 molecular weight and osteoblast proliferation and bone-strengthening activities. Said fraction is preferably prepared by adjusting an aqueous whey protein concentrate to 2 to 6 pH, adding ethanol so that the final concentration exceeds 10% to form precipitate, then collecting the water-soluble fraction from the precipitate. |
