PURPOSE:To provide the subject composition composed of a continuous fat phase containing an emulsifier and a dispersed aqueous phase containing a specific water-soluble hemicellulose at a specific ratio, effective for suppressing the cholesterol level in blood, having excellent applicability, taste, texture, palatability and stability and useful for health-keeping, etc. CONSTITUTION:The objective composition is composed of (A) 20-33wt.% of a continuous fat phase such as soybean oil containing preferably 0.1-1.5wt.% of an emulsifier such as ricinoleic acid polyglyceride and (B) a dispersed aqueous phase containing 10-20wt.% of a cereal-originated water-soluble hemicellulose having a viscosity of <=30cp (as 10% aqueous solution), extracted from outer crust of cereal and containing the fraction having a molecular weight of <=100,000 accounting for >=60% of the total water-soluble hemicellulose and preferably further containing 0.1-6.0wt.% of a gelling agent such as gelatin. |
