PURPOSE:To obtain the subject food useful for cheese, marine paste product, etc., having enhanced difference in texture, excellent flavor and palatability by combining plural foods having a water phase of continuous phase separately in each food and adding dietary fibers, etc., to a specific phase. CONSTITUTION:Plural foods having a water phase of continuous phase are combined in each individually existing state and one or more of (A) dietary fibers which are one or more of polydextrose, hardly digestible dextrin, decomposition product of cellulose with enzyme, decomposition product of thickened polysaccharide with enzyme and gum arabic, (B) dextrin and (C) glycerol in a water concentration enough to increase water mobility to the phase are added to a specific phase of the phases to give the objective food. |
