A process for the preparation of an emulsifying agent which comprises treating a biological material containing a lipid as well as a lipoprotein and/or a protein with a protease and a lipase and pasteurising the product. The biological material may also contain phospholipids such as lecithin and phospholipoproteins, e.g. egg yolk. |
