PURPOSE:To obtain a drink composition comprising unpolished rice as a raw material by solubilizing unpolished rice in water. CONSTITUTION:Protease, cellulase, pectinase and amylase are used. First, water dispersion of finely granulated unpolished rice is mixed with protease, cellulase and pectinase, digested with the enzymes and heated to give a gelatinized swollen rice flour solution. Then the solution is mixed with amylase and digested with the enzyme to extremely reduce an amount of water-insoluble substances. Thus, the objective drink obtained from unpolished rice as a raw material can be produced, and as a result, the nutriments of unpolished rice can be utilized as it is. |
