PURPOSE:To obtain a fermented drink having a natural flavor relying on fermentation of microorganism by inoculating specific yeast capable of forming a floral fragrance or a fruit fragrance into a raw material solution for fermentation. CONSTITUTION:Specific yeast such as Hansenula saturnus capable of forming a floral fragrance or fruit fragrance is inoculated into a raw material for fermentation such as apple juice or both for fermentation of yeast to give the objective drink having preferably <1 vol.% alcohol concentration. The specific yeast and a brewing yeast are preferably used. |
