PURPOSE:To shorten the cooking time for bulk food product such as beans or cereals and obtain food products of improved quality by immersing the bulk food product in flowing water under specific conditions. CONSTITUTION:A bulk food product is immersed in flowing water from which dissolved oxygen is removed to a level lower than 70% of the saturated concentration at 0 to 40 deg.C at a rate of 0.1 to 100-fold the apparent volume of the bulk food product, preferably for 0.01 to 8 hours, then in degassed or not degassed water at 0 to 40 deg.C, preferably additionally for more than 0.5 hour, whereby the objective food product is obtained. |
