PURPOSE:To obtain a raw processed food of cuttlefish or octopus having softness and good taste preservable for a long period of time with a low salt content by rubbing a raw material of fresh cuttlefish or octopus with salt, washing with water, cutting, adding rice KOJI, seasoning and spice to the treated cuttlefish or octopus, aging and preserving the material with juice of Citrus Junos. CONSTITUTION:A raw material of fresh cuttlefish or octopus is rubbed with salt, washed with water, cut into pieces or sliced, incorporated with rice KOJI, seasoning and spice, aged for several days and preserved with juice of Citrus junos to give a raw processed food of cuttlefish or octopus. |
