Oven, particularly professional oven, comprising a cooking enclosure (1) of the tank (shaft) type including a suction device and a loader (10) with steps made of metal wires arranged in pairs, intended to support one or more sheets for cooking food, characterised in that the lateral walls of the cooking enclosure (1) are smooth and the loader (10) is a loader/diffuser equipped with lateral flanges (30, 30a) with horizontal cutouts (36) offset from the side of the loader/diffuser placed in the end of the enclosure and located so that they sit in between the wire steps (14, 14a), the whole thing providing a flow of directed air giving homogeneous cooking throughout the enclosure. <IMAGE>
