PURPOSE:To obtain the titled product providing wheat flour dough having improved mechanical resistance, bread having good appearance, aging resistance, etc., by adding sophorolipid, a kind of glycopilid, to wheat flour or a product containing it. CONSTITUTION:A sophorolipid shown by the formula I (R1 and R2 are H, or acetyl; R3 is H, or methyl; R4 is 12-16C hydrocarbon when R3 is H, and 11-15C hydrocarbon when R3 is methyl) and formula II is added to wheat flour or a product containing it, or making the wheat flour or the product containing it contain the sophorolipid to give the aimed wheat flour product. Production of bread from the wheat flour containing the sophorolipid promotes dough formation during mixing, improves gas retention power during baking enlarges bread volume, and provides bread with good appearance and aging preventing properties. |
