This automatic device for regulated draining of a vat (4), the lower base (7) of which is profiled in order to have a slope descending from its periphery towards the centre, the latter being perforated with a drain orifice (10) which can be closed off, which vat (4), the upper end of which is equipped with a filling orifice (5), comprises a telescopic shaft (9) intended to penetrate into the said vat (4) via its filling orifice (5) coaxially opposite the drain orifice (10), including: - at its lower end, an auger (drill) (20) capable of being activated in rotation in both directions; - and a plurality of arms (11), one of the ends of which is integral with the telescopic shaft (9) in the vicinity of the upper part of the auger (20), the said arms being capable of deploying radially downwards until they adopt a profile matching the profile of the base (7) of the vat (4). Application: racking (tunning) a vat, particularly a vinification vat. <IMAGE>
