Process for the preparation of difructofuranoside dianhydrides, and of their mono- and difunctionalised derivatives, starting with sucrose as well as oligo- and polysaccharides and products obtained

The preparation process consists in dissolving a di-, oligo- or polysaccharide carbohydrate containing at least one fructofuranosyl structural unit linked at the anomeric position, in pyridinium poly(hydrogen fluoride) (C5H5NH<+> F(HF)@) and in isolating the alpha -D-fructofuranose beta -D-fructofuranose 1,2':2,1'-dianhydride formed. This process is also applicable to the preparation of derivatives of alpha -D-fructofuranose beta -D-fructofuranose 1,2':2,1'-dianhydride functionalised especially at the primary alcohol positions.
