PURPOSE:To obtain high-quality noodles, excellent in texture and taste and preservable at ordinary temperature for a long period by carrying out immersing treatment of steamed or boiled noodles in a treating solution of a specific composition excellent in pH retention and stability, filling the resultant noodles in a bag and thermally sterilizing the noodles. CONSTITUTION:Boiled or steamed noodles are initially subjected to immersing treatment in a treating solution composed of (A) 0.5-10wt.% glucono-delta-lactone, (B) 0.05-1wt.% organic acid and/or its salt (preferably lactic acid and its salt), (C) 0.2-3wt.% ethanol and (D) the remainder of water. The resultant noodles are subsequently filled in a bag and then thermally sterilized. Furthermore, the immersing treatment is preferably carried out so that the pH of the noodles subjected to immersing treatment may be 4-5. |
