PURPOSE:To obtain the title food suitable for healthy foods, etc., having excellent glutinousness, elasticity, texture and mass productivity by heating a mixture comprising bean curd carrageenan and water, cooling, solidifying and forming into a noodle shape. CONSTITUTION:A mixture of (A) preferably 10-70wt.% bean curd, (B) preferably 0.2-4wt.% carrageenan and (C) water is heated preferably to 50-70 deg.C, cooled, solidified and formed into a noodle shape to give the objective food. The mixture is preferably an emulsion prepared by using a homogenizer. |
