PURPOSE:To obtain a releasing oil having low viscosity and excellent fluidity, workability and releasability and useful for the preparation of cake, etc., by mixing and dispersing edible oil and fat, etc., at a temperature above a prescribed level and quenching to a temperature within a prescribed range. CONSTITUTION:The objective releasing oil can be produced by mixing and dispersing raw materials containing (A) a food oil and fat such as soybean oil, (B) 15-35wt.% of starch such as corn starch, (C) 0.7-10wt.% of an oleophilic sucrose fatty acid ester having an HLB of 1-7 and (D) 1-7wt.% of lecithin at >=60 deg.C and quenching the dispersion to 15-30 deg.C. The releasing oil is preferably incorporated with fine silicon dioxide powder. |
