PURPOSE:To gelatinize every kind of protein safely and inexpensively and to obtain the title gelatinized material by treating a solution of protein with a culture mixture of a specific fungus. CONSTITUTION:A solution of protein (solution having preferably 0.2-6.0% protein concentration) is treated with a culture solution of a fungus (preferably Aspergillus oryzae or Monascus anka) belonging to the genus Aspergillus, Monascus, Penicillium, Rhizopus, Neurospora or Mucor preferably at 28-35 deg.C for 6-75 hours to give the objective gelatinized material. |
