DRIED MICROBIAL CELL FOR ESTER INTERCHANGE OF OIL AND FAT

PURPOSE:To obtain dried microbial cell capable of increasing the transesterification rate of oil and fat over a long period by adding a specific amount of a lipase-inducing substance to a culture liquid of lipase-containing microorganism at the initial stage of or during the culture, washing the obtained microbial cells with a water-soluble solvent and drying the washed cells. CONSTITUTION:The objective dried microbial cells can be produced by adding a glyceride or a fatty acid as a lipase-inducing substance to a culture liquid of lipase-containing microorganism at the initial stage of or during the culture in an amount to get a substance concentration in the culture liquid of 1-80wt.%, washing the obtained microbial cells with a water-soluble solvent and drying the washed cells to a watercontent of 1-20wt.%. The lipase-inducing substance is preferably triolein, diolein, monoolein, oleic acid or linolic acid.
