摘要

The aim of the invention is to use strains of the microorganism species Geotrichum to increase the selectivity of raw-lipase mixtures. This has been achieved by the discovery of a strain which produces a raw-lipase mixture capable of selectively splitting fatty-acid triglycerides so that oleic acid is the favoured product.
