The invention relates to an installation for processing vegetables with a view to preparing them for cooking. An installation of this type includes, on the one hand, members 1 which hold the vegetables and are made up of two opposing parts 2 and 3, one of which has at least one deformable bearing surface 4 and/or at least one slot and, on the other hand, at least one cutting station which cuts by means of high-pressure water jets, and means for providing relative movement between the said station and the said members.
