Method for manufacturing a food preparation of the sausage type, in which a meat paste is obtained, the paste is fastened at both ends in an elongate envelope (1) of the sausage casing type, which is then closed at at least one end (1a, 1b), and the paste enclosed in its envelope is then matured/dried, characterised in that fastening at both ends is performed in a permeable textile envelope (1) having, in the filled state, the shape of a tube, at least one (1a) of the ends of which is closed by an upright (straight) back plate (2) arranged transversely to the direction of the tube, and, after maturing/drying, the envelope (1) soiled by the surface fermentation products or moulds is removed in order to release a block (7) of paste having the shape of the said envelope. <IMAGE>
