PURPOSE:To efficiently obtain an alpha-L-aspartyl-L-phenylalanine methyl ester precursor by chemically modifying a thermolysin-like enzyme which is a metallic enzyme and using the resultant modified enzyme. CONSTITUTION:A modified thermolysin-like enzyme in which a compound expressed by the formula [(n) is a natural number] is linked to carboxyl groups in its molecule through covalent bonds is used to carry out synthesis of an alpha-L-aspartyl-L-phenylalanine methyl ester precursor.
