The invention relates to N-alkyl, N-acetylosylamines, characterised in that they are of the formula (I): in which - R1 represents the residue of a reducing sugar chosen from glucose, galactose, lactose or cellobiose, - R2 is a linear or branched alkyl radical containing from 1 to 24 carbon atoms, preferably from 8 to 18 carbon atoms, provided that, when R1 is a lactose residue, R2 is different from a nonyl radical, to the process for preparing them and to their use as surface-active agents or solubilising agents for the isolation of membrane proteins.
