PURPOSE:To obtain the subject food, having chewiness and excellent in flavor by applying powdery cheese to the surface of a raw material for a dried food of delicate flavor using pullulan and a viscosity increasing stabilizer as an application material. CONSTITUTION:The objective food is obtained by applying powdery cheese to the surface of a raw material for a dried food of delicate flavor which is dried fishes and shellfishes selected from the group consisting of cuttlefish, octopus, jellyfish, scallop, abalone, cod and filefish using an aqueous solution of an application material, having 100-500cP viscosity and composed of pullulan and a viscosity increasing stabilizer selected from the group consisting of xanthan gum, locust bean gum, guar gum and gum arabic as the application material. |
