PURPOSE:To provide the subject composition containing alginic acid dispersed in a specific gel to suppress the characteristic acid taste of alginic acid and having moderate viscosity to enable the addition of a sufficient amount of the composition to a food and the sufficient development of various activities of the acid. CONSTITUTION:The objective composition is produced by dispersing alginic acid in a hydrocolloid gelatinized with an alkali metal ion (preferably Ca ion). Concretely, the composition can be produced by dispersing alginic acid powder in an aqueous solution of hydrocolloid, dropping or tubularly extruding the hydrocolloid solution containing dispersed alginic acid into an aqueous solution of an alkali metal ion and washing the gelatinized product with water.
