PURPOSE:To age dried thin noodles in a short time with small variability of taste in excellent productivity by making vapor of ethyl alcohol, steam and air absorbed in heated dried thin noodles in a closed processing container. CONSTITUTION:Dried thin noodles are put in a closed processing container, 1-5wt.% based on the dried thin noodles of aqueous solution of ethyl alcohol by weight is prepared, poured into the closed processing container, which is heated to circulate air. Vapor of ethyl alcohol, steam and air are rotated to heat the dried thin noodles and vapor of ethyl alcohol, steam and air are absorbed in the dried thin noodles to age the dried thin noodles in a short time. |
