PURPOSE:To obtain the title composition having excellent untieable property, workability and productivity and useful for rice products by using a specific emulsifying agent, adding amino acids, etc., to the water phase and keeping the average emulsifying particle diameter in a prescribed size or below when a water-in-oil type emulsified oil and fat is produced. CONSTITUTION:When a water-in-oil type emulsified oil and fat is produced, a polyglycerol condensed ricinoleic acid ester is used as a emulsifier and at least one kind among the compound of a group consisting of amino acids such as epsilon-polylysin, nucleic acid such as inosinic acid or/and organic acid such as acetic acid are added to the water phase, and the ratio of oil phase and water phase is preferably controlled to 80/20 to 50/50 and the average emulsified particle diameter is kept to <=1mum to provide the objective composition. Furthermore, the composition is added to raw rice or wheat flour at an amount of 0.1-10% to provide rice or noodles having excellent untieable property and gloss. |
