The present invention relates to sucrose monoesters corresponding to the general formulae below: <IMAGE> in which R represents: a linear or branched saturated aliphatic chain containing 1 to 17 carbon atoms or an unsaturated aliphatic chain or an aromatic group or a more complex group such as those represented below: <IMAGE> as well as the processes for their manufacture from sucrose, without prior protection of the hydroxyls.
