A prepn. (I) comprises reacting aldehydes with hydrocyanic acid in the presence of D-oxynitrilase and an organic solvent which is immiscible with water but is satd. with water or an aq. buffer soln. Pref. the organic solvent is an aliphatic or aromatic hydrocarbon, a chlorinated aliphatic hydrocarbon, an ether, an alkyl ester of a carboxylic acid or an aliphatic or cycloaliphatic alcohol. The organic solvent is pref. satd. with an aq. buffer of pH 3-8.
