PURPOSE:To prepare the subject firefly squid pickled in rice malt, eatable together with the rice malt and having extremely good preservability and unique taste and flavor by preserving a firefly squid in a temporary pickling bed in frozen state, thawing the squid and aging in the main pickling bed for a short time at a low temperature. CONSTITUTION:A temporary pickling bed having creamy texture is prepared by using rice malt and steamed rice as main components, adding a large amount of salt thereto, ripening the obtained pickling bed material and adding a small amount of alcohol to the ripened material. A firefly squid is preserved in the temporary pickling bed in frozen state over a long period to effect the ripening of the squid. The preserved squid is thawed and the temporary pickling bed is removed from the squid. Separately, a creamy main pickling bed is prepared by using rice malt and steamed rice as main materials, adding a small amount of salt thereto, ripening the obtained pickling bed material and adding a small amount of alcohol and a proper seasoning to the mixture. The ripened firefly squid is ripened in the main pickling bed for a short time at a low temperature to obtain the objective squid pickled in rice malt. |
