A cocoa flavor is prepd. by (a) mixing 10-24 % crude lipd- contg. cocoa with the mixed soln. of one or more of alcohol, acetone, water, propyleneglycol, glycerin, benzyl alcohol and isopropyl alcohol, (b) extracting the mixt. and concentrating, and (c) reacting the concentrated mixt. with carbonyl radical-contg. sugar mixt. of one or more of glucose, fructose, sucrose, maltose, transformed sugar, etc. in the presence of catalyst at 70-180 deg.C for 0.5-10 hrs. The catalyst is the mixt. of one or more of ammonia, Na hydroxide or potassium hydroxide. The obtd. product is useful for the prodn. of tobacco, food, confectionary, beverage, etc.
