The invention relates to a lightweight device (2) inserted beforehand between the valves and carried by the shellfish (6) at a favourable location on its perimeter close to the mussel to be cut (4) in order to make the joint visibly apparent and easily to guide the knife (3) of the consumer towards the inside during the opening operation, without danger or shell debris. It consists mainly of a semi-rigid very thin blade made from a single (1) or double (2) thickness of food-grade material, penetrating not very deeply between the valves of the shellfish without touching a vital organ (5), whilst allowing the shellfish to retain its leaktightness. These knife guide blades of various shapes are fixed by elastic bracelets, adjustable strips (9) or by a clip, such that the shellfish can live without having to shrug them off, being emptied of its water, or it being detrimental to its health. The invention proposed is more particularly intended for the easy opening of oysters and shellfish by all consumers. <IMAGE>
