摘要 PURPOSE:To obtain a fermented soybean food freed from smell and stringiness peculiar to soybean, capable of storing and having intestinal function controlling action and blood pressure elevation-suppressing action by subjecting soybean to fry processing under reduced pressure to evaporate water content, removing oil content and separating a peripheral part from the soybean part of fermented soybean. CONSTITUTION:Fermented soybean is subjected to fry processing to evaporate water content under reduced pressure and oil content of fried fermented soybean is removed. Then the fried soybean is cooled and pressurized to ordinary pressure and the peripheral part of a soybean part of fermented soybean is separated from the soybean part of soybean to provide the aimed food.
