摘要

NEW MATERIAL:A Streptococcus M37W strain (FERN P-11487) having a high ability of producing diacetyl and acetoin from saccharides. USE:The strain can be utilized for the fermentation of various foods and give characteristic smells and flavors to the foods. PREPARATION:A parent strain, Streptococcus IFO 3535 strain, is subjected to a mutational treatment such as a nitroso guanidine treatment and a strain having an ability of producing the diacetyl and the acetoin is screened from the produced strains.
