PURPOSE:To obtain a fancy food having mild taste at a low cost by applying a specific pasty kneaded mixture to a thin sheet of fish meat, placing the sheet on another sheet while the kneaded mixture is still hot, pressing and cooling the laminate and slitting in the form of thin sticks. CONSTITUTION:A fish meat sheet is produced by adding starch, salt, etc., to ground meat of cod, extruding with an extruder in the form of a continuous thin sheet and heating and drying the sheet. Separately a pasty kneaded mixture is produced by mixing liquid egg and cheese at a weight ratio of about 1:1, adding starch, a seasoning and an emulsifier (e.g. sodium citrate) to the mixture and mixing under heating at 60-90 deg.C. The pasty mixture is applied to the above fish meat sheet, the sheet is placed on another fish meat sheet while the kneaded mixture is still hot and the laminate is lightly pressed and cooled to normal temperature and slit in the form of thin sticks to obtain the objective food. |
