PURPOSE:To obtain the subject composition effective in forming a water-sealed coating film on various food ingredients and giving a food free from tackiness, etc., by adding an alkaline-earth metal organic acid salt to one or more kinds of substances composed of proteins and polysaccharides, their decomposition products, etc., having properties such as solubility in water and gelatinizability to form a gel. CONSTITUTION:The objective composition is produced by adding and mixing an alkaline-earth metal organic acid salt (e.g. calcium gluconate) to one or more kinds of substances (e.g. casein and alginic acid) composed of proteins and polysaccharides, their decomposition products, etc., soluble or dispersible in water and coagulable or gelatinizable to form coagulum or gel. |
