PURPOSE:To obtain the title material having low digestion and absorption rate and the same taste and texture as those of ordinary starch, by blending starch with a fatty acid compound and water in a specific ratio. CONSTITUTION:100 pts.wt. starch (preferably starch flour or grain granule) is blended with 5-20 pts.wt., preferably 5-10 pts.wt. fatty acid compound (preferably ester compound of 8-20C fatty acid and polyhydric alcohol) and 5-40 pts.wt., preferably 10-20 pts.wt. water to give the objective material. |
