PURPOSE:To obtain a food material having a wide use with modest digestion and absorption having the same taste and texture as usual starch by dissolving or dispersing starch and a protective agent into a solvent. CONSTITUTION:Starch and a protective agent are added into a solvent and dissolved or dispersed, then the starch is brought into contact with the protective agent in the solvent to afford the aimed food material. As said material, (1) a material in which a part or whole of the surface of the starch is covered with the protective agent, (2) a material in which the protective agent is a fatty acid compound, (3) a material in which the fatty acid compound has an amphipathic property and (4) a material in which the amphipathic substance is free fatty acid or salt or ester of said acid, etc., is exemplified. Starch in a portion covered with the protective agent is hardly subjected to an action by digestive enzyme such as amylase. Therefore, the aimed food material has a slow speed of digestion and absorption comparing to usual starch. |
